As the cost of groceries continues to climb, we nee to have more recipes like this one that are just a good for the taste buds as they are for the pocket book. This is another recipe that I found and modified based on what I had around the house. We liked it so much I threw out the original.
Ingredients:
- 1 apple diced
- 1 med onion diced
- 1pk boxed stuffing with seasoning.
- 2/3 cup orange juice
- 1/3 cup packed brown sugar
- 3 tbsp melted butter
- 1 ½ lbs chicken breasts
- 1 ½ cups hot water.
What to do:
Preheat oven to 350. Mix diced onion, apple, stuffing, and water in dish and set aside. Place chicken in baking dish. In separate bowl mix sugar, juice, and butter until well blended. Pour over chicken. Top with stuffing mixture. Bake 45 minutes to 1 hour our until chicken in done.
Serve it up:
I like to cool this dish down with a simple dinner salad. It is really quite filling. Enjoy!
Change it up:
Try making this one with pork chops and apple juice.
